"If You Give a Mouse a Cookie," is an engaging, repetitive piece of literature that students enjoy listening to and reading. It provides a great opportunity for developing writing skills in kindergarten and first grade students. Connecting the art work to this activity is a bit of a stretch for me, but I guess you could use it to encourage speaking skills.
